Let’s Kick Some Colds with this nutrient rich soup!…and don’t forget to cut out your sugar intake and drink lots of fluids!
Ingredients:
- 1 cup Basmati rice cooked in chicken broth
- 3 carrots diced
- 2 celery stalks diced
- 1/2 onion
- 1 tsp. Thyme
- 1 clove of Garlic
- 1 tsp. Tumeric
- Cayenne or Red Pepper to taste
- 1 can Chickpeas
- 4 Chicken thighs
- 1 cup chopped kale
- 1 head of broccoli steamed
- 6 cups chicken broth
Prepare chicken. Prepare rice.
Saute’ garlic, onion, then add carrot and celery
Add broth, chicken, chickpeas, and seasonings and bring to a boil, reduce to simmer and add kale and broccoli – simmer for 15 min, add rice and simmer for another 5 minutes.
